Stuffed Aubergine & Courgette

With Saida Mia Kitchen Sugo sauce

Saida Mia Kitchen Sugo Sauce

Ingredients: tomatoes, tomato puree, rapeseed oil, garlic, coriander, oregano, basil, black pepper, cumin and salt.

GMO, Dairy and Gluten Free with no added sugar or additives.

1 or 2 aubergines sliced in two
1 or 2 courgettes sliced in two
2 tablespoons of olive oil
1 jar of Saida Mia Kitchen Sugo sauce
salt and black pepper
chopped fresh basil
shaved parmesan cheese


Slice the aubergines in two and scoop the flesh into a bowl. Do the same with the courgettes. Rub a little olive oil onto the scooped skins then place onto a oven tray and place under a hot grill for around 5-8 minutes.

With the contents of the bowl mash and add Saida Mia Kitchen Sugo sauce add to a frying pan and fry for around 2-3 minutes add seasoning salt & black pepper. Place the ingredients from the frying pan into the grilled skins. Garnish with parmesan cheese place under a medium grill to melt the cheese. Garnish with basil leaves and serve hot.
